Vegetarian spaghetti carbonara

Ingredients:

♥ 200g spaggetti

♥ 1 tbs olive oil

♥ 2 eggs

♥ 40g parmesan

♥ Pinch black pepper

♥ Pinch salt

♥ 4 strips Qourn bacon


 Directions

  •  Crack the eggs into a bowl and beat
  •  Grate the parmesan and add the salt and pepper into the bowl and mix
  • Cook the spaghetti in boiling salted water until al dente (save some of the pasta water)
  •  Add the olive oil into a pan, cut the veggie bacon to your liking and fry it
  • Lower the heat on the pan and add all the pasta and mix with tongs (remember keep some pasta water)
  • Turn off the heat and add the egg mixture into the pasta and mix with tongs again. If the sauce gets too thick use the saved pasta water.
  • Serve and enjoy (:

 

This blog post is dedicated to my boyfriend who has been vegetarian for 5 months. His favourite dish was spaghetti carbanara. Obviously turning vegetarian he thought he couldn’t have it anymore until we found the quorn bacon so I tried to recreate his dish and he loves it. It shows you that you can still be vegetarian and have some of your favourite meals!
